Everything a header write sets, minus the two key properties, which the MERGE pattern owns and nothing may move.
Null values are deliberate. SET n += $header removes a property bound to null, so an optional field the run does not carry leaves no property behind, and a run saved again without it is stored the way a run that never had it is stored.
